The life of a product in the cold chain begins the moment it arrives at the processing area. The faster you cool it and bring it to storage temperature, the healthier and longer the product will be.

In order to provide these conditions for the product to be stored, it is necessary to use special devices for rapid cooling rather than storage tanks, because while storage devices try to maintain the temperature inside against the heat from outside, rapid cooling and freezing devices are designed to cool the products as quickly as possible.

What is shocking?

As a term, shocking means that the products are frozen quickly and the water activity is completely stopped.

The most important factor in the decay or deterioration of a product is the presence of water in it.

Briefly, shocking is the dormancy of the

product. The water activity must be stopped before any bacteria formation starts in the products that will be stored in the frozen state. Therefore, the product is frozen very quickly and the core temperature of the product is reduced to -25°C and below and kept at this temperature for a while. Since the bacterial life naturally ends when the water activity stops, these products are then kept in cold storages with temperatures between -18°C and -25°C, depending on the need.

shocking devices are a different system compared to the normal cooling devices , and it is a cooling system made with double-stage cooling compressors.
